I love the off key notes they stick in these songs.

I'm working on Mini Boss Theme #1 also known as Stalfos Battle (I think, I haven't researched the track names too deeply and haven't played the game)

The Stalfos battle theme is slightly different.  The regular miniboss theme has no timpani part, the stalfos battle has timpani, and the battle against Scervo (pirate, robot stalfos) has the same timpani part but much louder.

Well if it appears in more than battles with stalfos, then I guess I could title it Miniboss theme 1.
