A new thing I've adopted is I try not to actually say I accept any requests until I've already finished them. (If I don't need to ever say I'm working on it that's fine)
But at least I don't disappoint anyone with misfortune.

I usually don't claim it till I'm partially through the song, however, I've broken my rule more often then I've followed it.
