With an electric keyboard you can adjust the volume quickly, you can use different sounds and their sizes are different, which makes them easy to move.

^that, and there's also the tactile differences between keyboards and pianos. On keyboards, you simply can't feel the subtle click of the felt hammers striking the strings, or the recreate the sound of strings vibrating in sympathy via the una corde pedal.

But I'm pretty sure she was referring to the fact that it's not necessary to list them as separate instruments; if you can play one, there's no reason you can't play the other.

In most cases yes. However, if you were attempting to play a modern composition employing extended technique, then no.

Ah true. The only way to play Song of Unhealing correctly would be on a keyboard, and have a friend adjust the volume every time you struck a key.
