But I'm here cuz I have two questions regarding EVs:
1) Can gained EVs still result in stat changes after hitting level 100, thereby losing the ability to level up ever again?
2) How can one find out how many EVs a give pokémon has at a given point in each category?

1) Any training on EVs is to be made before hitting level 100, so no.
2) You have to keep a count, but I recall seeing some EV calculators in the Interwebz. I prefer counting the EVs on paper when training my Pokemon.

Yeah, keep a notebook. It's what I do, and honestly, it's really handy. Make it a small notebook that isn't cumbersome to bring everywhere.

You can EV train your 'mons even when they're lvl 100 now.

Yeah I use items to EV train my 'mons, it's much faster than battling the same Pokémon over and over again. But yeah now if you battle using let's say a lvl 100 event Arceus, it won't gain any xp but it'll gain EVs. Which is pretty nice.

Yeah, Macho Brace/the Bracelets are the thing to have.

Even with the Power Anklet/etc and the Pokérus, you still need to ko 25 'mons to boost one stat (if you want to run 252 Evs)
Items = faster since you can just spam them.
