You can find them on the island on palm trees I think. They're hard to catch.

Yeah, golden stags at night look kind of brownish-black and they're super sensitive, so you have to move super slowly.

haha golden stags...I remember Blue came with me to the island and was talking about how they quickly fly off before you even get close to it...and then moments later...I caught one unexpectedly xDDD

If you look closely at the beetles you'll see them squirming back and forth.  When you see them stop moving they're about to fly off, but if you stand still for a bit they'll reset back to squirming.  Just a way to tell if you're moving too slow or whatnot.. though I've just done a stop and go sort of thing with them.
