One more question, if you don't mind lending more of your time haha - how would you teach a complete beginner with only performance experience to transcribe? xD

If you can. give them full finale and some general advice on how to use it, be available for formatting questions only, and give them an 8-bit song to work on in a software that can slow it down if needed.. Oh, and make sure they have a keyboard nearby.
Then let them figure it out for themself and coach their notation skills when they are completely done, but don't spell every mistake out for them. People remember better when they figure things out on their own.
