Definitely, definitely support writing in harmonies tastefully. This piece is fast but not so fast that the right hand is incapable of playing more than one note at a time. It's easy to play chords in places where the melody doesn't move very much (like in the intro) and it would definitely help to fill in the rhythm where it is lacking (like m. 7-8).

Also this isn't something we've discussed a whole lot yet - I would say that chord symbols are fine if you want to include them, but for the purpose of NinSheetMusic they should not replace explicitly voicing the chords.

-m4: I think I hear the E on beat 1.5 R.H. an octave higher?
-m12: I hear an F# in the R.H. on beat 3 instead of a G
-m33: I think I hear a C in the R.H. on beat 1.5 instead of an E
-m37: I hear the R.H. here similar to m33 (so C-Eb instead of E-E in beat 1.5-2)
-m41: Again the C in 1.5
-m47 and 55: I hear E#'s in beat 3.5 and 4.5 in the L.H., and maybe a C# in beat 4 but not sure
-m65 and 67: Maybe you could either tie over the grace note E's in the R.H. for playability, or remove them like in m69 and 71?
-m70: Maybe you could displace the F# in layer 1 so it's next to the half note? The quarter note currently hides the half note notehead.

-m15: There's a Bb in the bass on beat 1, but it's the same note as the R.H. Bb. It feels weird to have this first beat empty though, so maybe you could add it an octave lower than the original, or forego the held Bb in the R.H.?
-m21 and 69: I think I hear an En in the L.H. on beat 2.5 and an An on beat 4.5 (i'm counting the quarter notes as beats instead of half notes btw)
-m27 and 75: I think I hear an An in the L.H. beat 2.5 (similar to m15)
-m31 and 79: I hear an G in the L.H. on beat 4.5
-m63: I hear the L.H. Bb on beat 1 here too like in m15 and 27
-m65: I think I hear Bn instead of Bb in the R.H. on beat 3.5
-m72: There's a cautionary accidental on the Fn on beat 4, but this Fn is there as a grace note on beat 3 too, so maybe it's better to put the accidental there instead?
-m75: I hear an An on beat 2 instead of Ab
-m78: I think the Db and Fb on beat 3-4 are supposed to be C and Eb, but they're reeally sharp lol.
-m79 and 81: The chord symbols clash with the G in the R.H. here
-m96: Is the staccato here intentional? I don't really know how to interpret a staccato in this case
-m97-104: Is there supposed to be a second ending after this first ending? Or did you intend for this section to only be played the first time? In that case, a D.S. al Fine (with the segno at m9 and Fine at the end of m96) seems to be the more usual way to notate this. I haven't seen a single ending before. Also, the chord symbols in this section are missing.
-m104: The L.H. plays the Bb on beat 1 that the R.H. is holding, maybe you could just leave the R.H. half note out, as it doesn't have an impact on the performance at this point?

A comment on Dolphin Shoals: this is only one of three variants of this piece, this one being labeled "Dolphin Shoals (On the Sea)" on Nintendo Music. (yes they actually called it that) You could either change the title, or arrange the "Underwater" and "Sea Depths" variants as well and include them in this sheet.
