Aside from Count Bleck's Theme, you could attempt Honeyhive Galaxy from Super Mario Galaxy. :P

Aside that, I think Honeyhive Galaxy its a hard arrangement to make. I was think in arranging Gusty Garden, of Fate of the Universe, and also Melty Molten galaxy...

I'd really love to see an arrangement of Honeyhive Galaxy too...  But I'm sure whatever you come up with will be nice.  You do realize you can submit a second song for this week's update, right?
